EAT LIKE A KING: Cheeseburger Meatloaf


We're back for our installment of EAT LIKE A KING! Each week Elizabeth King shares with us (and all of you!) some of her go-to recipes that make her life as a mother, wife, and rancher easier!


This week she sharing her recipe for Cheeseburger Meatloaf! This fun twist on a cookbook classic is sure to be new favorite at the dinner table!


FREEZER TIP: Make this recipe ahead of time and freeze it! When you're ready to cook, simply let it thaw in the fridge, then cook per instructions! (A fully frozen meatloaf will take at least 48 hours to thaw in the fridge!)

 

Cheeseburger Meatloaf


Ingredients:

  • 2 lbs ground beef

  • 3/4 cup oats

  • 1/2 cup minced onion

  • 2 large eggs, beaten

  • 1/2 teaspoons black pepper

  • 3 cups shredded cheddar cheese

Instructions:

  1. Preheat over in 350°.

  2. Combine beef, breadcrumbs, onion, eggs, salt, and pepper in a large bowl and mix well.

  3. Pat out meat mixture into a large rectangle roughly 1/2 inch thick on a piece of wax paper.

  4. Spread cheese over meat, leaving 3/4 inch border along the edges. Roll up "jelly-roll fashion" to enclose the filling and form a pinwheel loaf. Press meat in on both ends to enclose the cheese.

  5. Place meatloaf in a 9x13 baking dish and bake until cooked thoroughly, roughly an hour.

  6. Serve and enjoy!
